HOW DO YOU FIT INTO THE WEDDING SCENE? WHAT DO YOU DO?
We’re caterers. Most of our food is cooked on our barbecue trailer. We serve Texas style barbecue cooked for up to 12 hours over wood fire. Our menu is made up of smoked meat, vegetarian and vegan options. We put as much emphasis into our sides and salads as we do with our mains. We serve your guests from a buffet style table, shared table platters or cocktail style.

We take pride in providing an authentic low & slow barbecue experience. We cut and season pecan firewood for flavour and source the best quality and local ingredients available. We’re at the venue from the crack of dawn, cooking over fire all day so your guests can see and smell dinner cooking.

What started out as a hobby cooking for family and friends became paid work with offers for us to cater private functions. Joel being American really missed traditional barbecue so we bought a smoker and the business grew from there.

We service from the Gold Coast to Yamba. Some couple book us up to 2 years in advance.
